Falafel - Veg starter/appetizer

Falafel is a very popular and traditional Middle eastern delicacy made with kabuli chana (in Hindi) or chickpeas (in English). It is combined with herbs and spices.

A great vegetarian starter/appetizer for all vegetarian lovers who are always looking for simple recipes to add a different flavour to their platter. In many European and middle eastern countries, this is wrapped in pita bread or tortilla and served as a main dish along with fries and veggies. This was pretty much my lunch twice a week during my stay. And that's how I got introduced to it.



A very simple recipe to try and very tasty. It is high on fiber and proteins but also deep-fried. Occasional indulgence into fried food does not cause any harm.

Ingredients -

  1. 1 cup kabuli chana/chickpeas (Soaked in water; overnight)

  2. 1 cup parsley leaves (If you don't find them, you can go with all coriander leaves)

  3. 1/2 cup coriander leaves

  4. 12-14 garlic cloves

  5. 1 small onion (chopped)

  6. 1-2 tsp red chilli powder

  7. 1 tsp cumin powder

  8. 1-2 tsp coriander powder

  9. 1 tsp black pepper

  10. 2 to 3 tsp salt (As per taste)

  11. 1 tsp baking soda

  12. 1 tbsp maida (in Hindi) or all-purpose flour (in English)

Procedure -

  1. Soak the chana/chickpeas in good quantity water for about 12 to 14 hours or overnight. In colder regions, it can take a little longer.

  2. Drain the chickpeas. Add all the ingredients and chickpeas in a mixer except maida and grind it all together.

  3. Do not add any water. The paste needs to be thick and coarse.

  4. Take out the paste from mixer. Add maida to it and mix well.

  5. Make round balls and refrigerate for an hour before you fry them.

To serve -

  1. Serve with a dip like Tahini/Harissa or an Indian green chutney.

  2. You can also serve with hummus.
